In the first seven to fourteen days of eating like this, three things change and none of them are fat.

Glycogen. Your muscles and liver hold stored carbohydrate, and every gram of it is stored alongside roughly three grams of water. Eat fewer carbohydrates than you burn and that store draws down. The water leaves with it.

Gut content. There are one to three pounds of food in transit through you at any moment. Change what and when you eat and that volume changes, which changes how your midsection sits before anything else has happened.
